Banana muffin recipe from pro climber Ashima Shiraishi. You’ll want to add some chocolate chips to these.

Full list of ingredients:

Muffin pan or 9″ x 5″ loaf pan
⅓ cup melted coconut oil (or quality olive oil)
½ cup maple syrup or honey
2 flax eggs (2 tablespoons ground flaxseed meal + 5 tablespoons water)
1 cup mashed bananas (3 medium browned bananas should do the trick)
¼ cup of unsweetened almond milk
1 teaspoon vanilla extract
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon cinnamon
¼ teaspoon nutmeg
1 ¾ cups all-purpose or white whole wheat flour
Optional toppings: ½ cup chocolate chips, ½ cup walnuts or pecans
